Glad the imodium helped. Yes, the food thing can be difficult when flaring. Virtually everything makes us suffer, if not immediately, then at least when we poop next. Low residue, low fiber, well cooked, and bland are all things to live by when flaring.
The extra stress is only going to aggravate her UC, as well. Have her ask herself: "Is this stress worth upsetting Ms. Colon?" The answer is most likely, no. A tough one to not get stressed over, but it does negatively impact our symptoms at times.
Make sure the staff at her university are aware she has UC. Universities often make special-accommodations for students with a disability like UC, allow extra time for assignments/tests, etc. As an example, she could take tests in a separate room adjacent to a bathroom, with as many bathroom breaks as she needs, and be allowed extra time to take them (even the time-based ones). There's ways to be successful at school despite UC, and that can help reduce the stress and make things more bearable. Most professors and school staff will try and be accommodating as much as they can, and want to help her be successful in her studies. And that could be a big sigh of relief for her
