Ah ok, I misunderstood because I interpreted the following:
"Originally we planned on Africa safari then Maldives but I then found out from my GI that I can’t travel to any countries that have yellow fever. So safari is out of the question."
as you thinking the entire African continent has yellow fever, which it doesn't. I certainly wouldn't write off the whole of Africa!! You can do fabulous safari in all the above mentioned countries. In Namibia travellers entering from a country with yellow fever are required to show a vaccination certificate before they're allowed in the country!
Botswana has dengue fever, I have a feeling that Namibia and South Africa do not, but you can check that for yourself. The hospitals in those countries are pretty good in case of emergency (assuming you have insurance), the thing which makes it risky is if you're in a place which is remote from a hospital. Again, you can plan for this. I would consider rabies vaccine if you will be near wild animals, and do check about malaria. The southern part of Namibia does not have malaria but - depending on the time of year - the northern part does.
