There's been a lot of recent studies and official statements from biologics manufacturers that these medications (for GI disease) don't tend to increase severity of Covid by themselves. If you have a serious autoimmune disorder or take other kinds of immunosuppressants, though, that would be worth considering. If you live in the States, you can now get a 3rd jab as well (if immunocompromised).
One reason your providers will recommend you get these other vaccines is because viral illnesses can sometimes make health conditions worse. For example, the last time I got the flu it, it triggered a lot of GI inflammation. Which made my biologic not work as effectively.
It's possible there could be changes to your allergies (depending on what kind), but reports are mostly anecdotal - I wouldn't rely on it. The main risk of biologics tends to be things like bacterial infection and just generally unpleasant side-effects. If you're otherwise healthy (except GI disease), it sounds like you're already being pretty safe.
