It's not "autoimmune," it's due to high histamine in the body. In other words, the body is already reactive so it becomes more sensitive to new assaults, even something as simple as clothing scratching the skin.
I used to have this big time until I changed my diet and eliminated reactive foods. When the blood is already elevated in histamine, any minor offense will become inflamed.
I recommend looking at the low histamine diet or ways to cut back on histamine. If histamine is extreme, then it may be related to something called Mast Cell Activation Syndrome (MCAS) which is just a fancy term for the cells that release histamine are way, way too active. All of this is related to gut health... and while it's not the origin of UC, the leaky gut that accompanies UC is usually the culprit.
