all this talk about spinach, i had to dig out this terrific recipe.
the directions are a little vague in some areas, but if you cook at all you can probably wing it.
i got the recipe from a friend at a deli so they made it in huge batches. so i don't have any measurements, but you can just add what seems like it would be tasty.
add the stuff you like and don't add the stuff that bothers you!
equal parts fresh ginger & garlic, minced
saute in sesame oil
add minced white onion and chopped potato & chopped (fine) carrots
saute all
add enough veggie or chicken stock to cover everything and let cook down.
add (thawed) frozen spinach (i'm sure canned would work too) and kale, finely chopped (food processor works best here or blender. add some of the soup stock back in if you need liquid to keep things moving)
add coconut milk, soy sauce, sugar, salt to taste
add a bit of crushed rep pepper if you like a little spice.
i loved this soup but haven't made it in ages. maybe some of you will enjoy this as a new way to eat your spinach! :)
