I have been eating the sunflower butter and was afraid to try spinach but last night I did. Thought I would share this recipe.
I dumped a can of chopped spinach into a non-stick pan. Added a bit of butter, lemon juice and salt. Once it was nice and hot, I added about 2 cups of cooked angel hair pasta and heated that through. Then I added some cooked shrimp, feta cheese and pecorino romano (these are goat cheeses - no lactose) and a dash of hot sauce. Tossed it all until everything was hot and bubbly. It was absolutely delicious and what is even better news.... my body loved it. As of yet, no adverse reactions! It was so good to taste spinach again after so many years without.
