It does sound as if a different GI might be the way to go. This is going to be someone you should be able to work closely with for a long time, and there are good GIs out there.

UC starts at the bottom and progresses up the colon.... how far do you have inflammation?
It sounds as if you're some better, and that's good; a lot of us also use mesalamine (kind of like Lialda) retention enemas, several ounces that one administers at bedtime and holds in overnight. The oral meds don't really get all the way to the bottom of the colon, so attacking from both ends is helpful to many of us. Since the Lialda has helped you some, those might do the trick for you... they're called Rowasa and sometimes doctors don't even bother to mention them, not sure why.
I find probiotics (good bacteria) helpful..... other folks will chime in, I'm sure, with good ideas. What works for one might not work for someone else - UC is a very individualistic disease.
