In reference to diets:
Diet effects different sufferers in different ways so you have to experiment. that means keeping an indepth food / UC symptom diary. You can then spot things that cause problems.
I decided to cut back to a bland diet which for me consists of:
Breakfast: porridge made with water sweetened with honey with sliced banana, pear, apple (all fruit peeled)
Lunch: wheat/gluten free toast
Dinner: roast chicken with carrots and potatoes or rice (all veg peeled)
Been on this diet for 3 months now and have slowly noticed improvements - a lot of symptoms have either reduced or disappeared.
Because of the diary I also know which foods cause me problems. As a general rule I'd say avoid anything that makes the colon work hard e.g. baked beans, carbonated drinks, eggs, spicey foods, processed foods. outside of that, after you've been on a bland diet for a while you can start putting things back in to see if they cause problems.
Just to reiterate - a bland diet for me might cause problems for you so you need to experiment.
Good luck
