Yes! I am wheat free , sugar free and gluten free and I feel fantastic. I was worried that I would have less energy but that is not so. I do eat fruit and I have a banana in my protein shake for breakfast --especially on long workout days ( I found a great gluten free one and it does use stevia to sweeten-not a problem so far) . I use honey as a sweetener whenever I bake. I make muffins with almond flour and fresh fruit. Sometimes I just use 100% organic fruit juice instead of honey or sugar substitutes and it works too. I love all of the new recipes I've tried and so does my husband. Its just healthier in general--even for him. You make want to look at scdrecipe.com, heal balance live and gluten free naturally (you can google these) for lots of quick and easy ideas. I try to use only natural,fresh ingredients and stay away from the pre-packaged stuff marked "wheat-free/gluten free". The recipes are usually made with fresh food.
BTW my husband (who does not have UC) commented on how much better he feels too! He has lost some weight because we eat at home all week instead of going out. We have actually saved some money too!
