Celiac needs to be diagnosed by biopsy of the duodenum or jejunum, I forget - this is done by endoscopy. An upper GI barium series is something you'd do to look for narrowing due to Crohn's disease. A colonscopy cannot see into the small bowel so this is a way to examine the small bowel via imaging. I don't think Celiac would cause the kind of damage you'd be able to detect via x-ray, but I'm not an expert.
Generally, when you go see a GI with bowel complaints, there is a suite of tests that are done. SBFT is one of the tests typically in that suite.
