Thought I'd share this with those who are thinking of going "Gluten-Free"
I got the Paleo Comfort Foods cookbook by Julie & Charles Mayfield from the local library. It's "Homestyle Cooking for a Gluten-Free Kitchen". I have to say that I'm impressed with several of the recipes.
I've spent my life addicted to carbs (bread and pasta) and was not looking forward to eliminating them from my diet but there are some interesting recipes in this book to create replacements. For instance, mashed cauliflower made with chicken stock and garlic to replace mashed potatoes.
The gluten-free diet may not be as dreary as I thought...
