To everyone who is going gluten free-
I bought some Bob's Red Mill gluten free cornbread mix at Ocean State Job Lot in MA yesterday and baked it this am. Delicious with butter!
Just added eggs, canola oil and almond milk and baked it in a 9x13 pan for about
30 minutes at 375d. You can use oil or butter in the recipe but I decided to apply the butter to the hot bread.
I'm so happy because I really missed having bread every day.
FYI: Went online to www.bobsredmill.com this am and they are having a monthly sale on several gluten free items. Lots of recipes and reviewer's comments available, too.
Also found Mary's Gone Crackers at Ocean State. Tried the Original flavor. Going back for other varieties today. Website for that product is www.marysgonecrackers.com
Company also has a Facebook page.
Going gluten free may not be as bad as I thought.

There is a ton of gluten free at the grocery store these days. I notice they are labeling stuff next to the price with a sign that says "gluten free". Potato chips are often gluten free it seems & I eat tons of them! I don't eat gluten free but I am cogniscent of what I am eating and I will try to pick up more gluten free products if I can.

Gluten wheat and barley are bad for me but I can tolerate non-gluten grains like oatmeal, corn, and quinoa. But there are some on this forum who cannot tolerate any grains at all which is why the SCD is popular. I hope you are not one of them and like me can enjoy buckwheat pancakes.
I don't follow a specific diet but only avoid individual foods that are incompatible with my body chemistry.

After basking in the sun for an hour, I went to the local bakery and asked the counter girl if any of the baked goods were gluten free or wheat free. She didnt understand and got a little defensive saying "Thats up to the bakers". I ordered a huge slice of Carrot Cake anyway and it was amazing, no stomach ache or anything!! WOOT, now that i cheated on this diet, I'm gonna have to restrain myself extra hard to not do it again for a while!!
Somehow in the deep south where gluten free is a very unheard of diet term, I still manage to find that Kroger has a gluten free section along with organics, same with Food Lion and the smallest section in Wal-mart too! I literally shop at 4 different grocery stores to get exactly what i need each week. Myrtle Beach is a pain in the ass place, unless your a college student living on Jimmy Johns like I was 2 years ago.

Oh, stereo, I hope you don't regret that carrot cake tomorrow or the next day. When I've strayed too far from my gluten free plan (never as far as you did with that cake!) the payback came the next day or the day after that. Nasty.

stereo-
Sometimes you just have to give in to temptation and I can't think of a better one than carrot cake with cream cheese frosting.
Maybe an extra shot of slippery elm will help when it comes back to bite you....

yeah, i also think gluten free is rather simple. everything can be made without it and taste somewhat the same.
stereo, i'd probably give in to carrot cake, too, if it was my birthday or a holiday. some things are just so good to never eat again.
