Sibby - No, I haven't had any consistency issues since going vegan other than my typical post-UC mushy BMs from Asacol...my new "normal." I think I was a little gassier than usual the first week or two but that went away. I do find that when flaring if I take a fiber supplement daily, that helps with bulking. I like the Metamucil cinnamon wafers because I think they taste pretty, good and I take enough pills already. haha.
Have you tried cooking leafy greens to help with digestion? Can you eat nuts or nut butters? You probably already know this, but you could get iron from a multivitamin/iron supplement or fortified cereals. Beans are high in iron too if you can tolerate them. I've actually never tested low in iron even when I was flaring really bad and losing a lot of blood. I guess I am lucky.
