Now I know why: my D3 is low again, so once again I'm going with the mega supplements. It seems like something in my body is just destroying that vitamin for me, because it just keeps being low.

This actually sounds like it could be a magnesium problem as well,
especially the joint pain. And since vitamin D supplementation reduces intracellular levels of Magnesium, I'd recommend doing both just to be sure.
You can buy magnesium oil pretty cheaply and apply it to the skin. Transdermal magnesium supplementation is the quickest way to bring your levels back up especially since those with UC have trouble absorbing it in the gut.
The two supplements will work very synergistically since a magnesium deficiency reduces the effectiveness of vitamin D.
