There are sooo many different diet mods.
Yes absolutely start a food journal. It is amazing how we forget exactly what we ate and blame (perhaps) the wrong food.
Some foods/drinks you can clearly see a reaction to, caffeine for example. Other foods might show a reaction overnight. Dairy causes my stomach to make gas overnight and that's not good coupled with any urgency.
Gluten was very hard for me to determine there was a problem (but there was) because the reaction was delayed to the point that gluten never seemed involved. It took several tries before I figured out that gluten was part of the problem. I do not suggest loading up on "gluten-free" products, instead just stop eating anything with gluten (bread, etc) for 2-3 weeks and see if things are better.
I also quit eating all grains. So I was gluten-free, grain-free and dairy free along with honey as only sweetener. This may seem like too much to do so don't get overwhelmed. You don't have to make all these changes overnight. I didn't.
What to eat: meat/protein(not soy) and low starch veggies.
Find some Paleo cookbooks at the library. Lots of people (non-UC too) are finding Paleo is a very healthy way to eat.
