Hi,
I ran with the GAPS diet for about 4-5 months last year and am still incorporating elements of it now.
I did well on it for a while. But ended up calorie deficient mainly through lack of carbs, lost weight, and ended up in a pretty bad flare about 4 months in. SO be very mindful that you're getting a lot of calories one way or another.. either by eating a lot more often (soup broth many times a day) a lot of eggs, pumpkin, nut butters, good fats, avocado etc etc.
Glad you have had some relief (I agree it's frustrating not knowing what's giving you the most benefit - humira or the diet). I'd say mainly the Humira and the diet is secondary. But keep at it (it may be helping a significantly) ...but monitor that weight loss as it can get you in a bad place.
Keep us posted.
