I follow a largely gluten free and paleo diet. I do not believe I have a gluten sensitivity, but I do feel better, healthier on this diet - and as far as the gluten free part goes, for me that really means I don't eat bread and pasta and that I do not worry about the small amount of gluten in things like soy sauce. And as far as the paleo diet, I found after doing it strictly for a period that I really need some grains like rice and quinoa as well as the carbs for my digestive system to work well.
So, basically, I feel best when I eat a meat and vegetable dominated diet, so that's what I do.
