I am dairy-free and use coconut milk in my coffee, dee-lish. I skim the top cream off the can of regular coconut milk (not the 'lite" version) and buy the kind with the fewest chemical preservatives in it. I'm not flaring but don't remember coconut milk ever being a problem for me (and my gut hated a LOT of things--fewer now but still have a list lol).
My local grocery has several kinds so I'm sure your grocery must have it too. Read the ingredients.
I don't buy "lite" because it doesn't have the cream separate from the liquid, just my preference.
Coconut oil is also an anti-inflammatory. I take it by the spoonful and cook with it. Good for your gut, your skin and hair too. Good quality calories, try and add it wherever you can, in smoothies, soup, etc.
P.S. I couldn't drink coffee while flaring and had trouble with even normal de-caffeine tea and coffee.
My fave decaf coffee is Paul Newmans'. I still drink it in the afternoon (can't drink caffeine after AM or sleep is elusive).
