"I've recently read Michael Pollan's book Cooked, and he makes the excellent point that in the manufacturing of bread we no longer use natural cultures. For millenia people lived on bread that rose due to local bacteria and yeasts. No longer (maybe 100 years or less). In addition, the processing of fermented foods has eliminated local cultures. Our exposure to the gigantic amount of bacteria and fungi in our environment is so limited now in western cultures it is not surprising at all to see increases in diseases that are linked to gut bacteria (and the list of those diseases keeps growing)."
totally agree Kaz - we live in a world of giant hand sanitizer bottles - and it doesn't seem to be working -
