After being someone who previously didn't eat a lot of starches, I do consider same of them safe now and somewhat essential for keeping my metabolism up. In the paleo community, there is some controversy on starches because many people have terrible symptoms cutting out the carbs. Some paleo doctors have their patients do very well after adding in safe starches like potatoes, rice, taro root, etc.
I've had great results with plantain chips. Since they are low in insoluble fiber, I'd assume that people here would have little difficulty in processing these. These are classified as retrograde resistant starches since they are cooked and then cooled.
I saw considerable stool formation after adding these in and I just wanted to pass the word.
