Seriously, I think we need to question the "law of conservation of mass" get the physicists! I have days where I question the amount I ate versus the amount I have outputted.
The serious answer is diarrhea is mostly water and one can drink a lot of water in a day, so food isn't the only thing that makes it up. Although, I don't currently have diarrhea myself, the volume of my poop does vary day-to-day and the reason for it is consistency of the bm. The more dense (firm and formed) a particular bm is, the less there appears to be of it when you look in the bowl. Where as, if you have a mushy, fluffy, or semi-formed bm which is a lot less dense, then there appears to be a lot more of it in the bowl, since it isn't as compacted, is more airy, and so forth. I've filled the bowl multiple times in a day, with that mushy stuff (just like an iceberg, part reaches above water and the rest of the bowl underneath is filled). Now that things have firmed up more, I hardly ever breach the water line, not even anywhere close most times.
