I was starch-free for several years until my gut got better. Now it's happy with potato salad but not beans (too much fiber for my gut) or rice (not sure why but I tried rice and not so good).
Since you have both diseases to deal with "starch-free"might be the place to start.
RS may help UC but it's not totally necessary. Add RS later (my 2 cents).
