If we want to get scientific, I don't think modern wheat can be given a free pass and absolved from some of our health problems anymore, particularly when it comes to some of the common inflammatory markers and reduction in IBS symptoms. I see zero issues with this dietary pursuit, as nothing but good things can come out of it.
Read up on wheat belly or grain brain on the perils of gluten/wheat. This recent
study kind of vindicated everything they said about
modern wheat. IMO, there is every reason to eliminate modern wheat from our diets, but it's a very tough decision to make and I had trouble with it as well.
My sensitivity tests showed no gluten issues, but I get reflux, congestion and brain fog symptoms after attempting to reintroduce it to my diet. My bowels can tolerate it, but I prefer not to eat it because it's pretty much empty calories.
