Interesting thing here is that both types you talk of - a) the "hole cheeses" such as emmental and b) the aged parmesan type have definitely both been mentioned in studies in the past, I think on here, as possibly having bacteria beneficial to helping dysbiosis in IBD. We are an inconsistent lot!
