I am also prediabetic which I discovered by watching my fasting glucose level gradually rise higher and higher over the years during routine blood work. So for the past several years I have been checking my fasting blood level first thing every morning.
Thru trial and error I learned of course that high fructose corn syrup will raise my blood sugar but I can tolerate moderate amounts of real sugar in chocolate. Interesting I also found that gluten will spike my blood sugar. Dairy too but less dramatically. I already learned to stay away from gluten because of UC but dairy never affected my UC symptoms. But no more cheese at night unless I want to see a blood sugar spike the next morning.
