Welcome harto. This thread is talking about traveling for a holiday/vacation and tips to avoid urgency during it (skipping food helps then). However, on a day-to-day basis you've got to eat. There's no magic list of here's what everyone with uc should/shouldn't eat. Rather, it's extremely individual person-to-person. When we're flaring most foods upset our gut (keep it bland, non spicey, and well cooked). Once your uc flare is under control you should be able to reintroduce most foods. Some have good food sensitivity and avoid those trigger foods (again, variable by person and super individual).
If your uc is well controlled (3 or less bms a day), it's possible to regain weight by adding lots of extra calories (extra meals, extra servings, and extra snacks). It's a very slow process, but persistently eating more will regain weight over a period of weeks and months. If you're still experiencing bad uc symptoms, like many diarrhea episodes a day, then gaining weight is impossible until you heal more.
