I am in what seems to be a flare. Constantly having to go with loose stools. Had bloodwork done this week and my ESR is low as well as my CRP both well in the normal range. Anyone else have low markers even when they are flaring?

those markers often fail.
but if there are motility issues instead of inflammation issues, you would expect low. could be ibs-d secondary to ibd

There are some false positives and false negative results with crp. Accuracy of crp is about
91 percent in this one study. Source:

You might have a small amount of inflammation causing you trouble.

I'd ask for a fecal count test. My crp is always low but my ESR does go up. It could be a false negative or it could be IBS. I dealt with a lot of symptoms that mimicked a flare and it ended up being IBS.

Seems to definitely be a flare just because I've been taking steroid enemas for about
a week and my symptoms are improving. Still very tired though..

For what it's worth, I've had severe extended UC flares (lots of inflammation & bleeding evident in colonoscopies) and yet no elevation of either sed rate or CRP. My docs say that's the case for some of us.
