I think you need to do a lot more testing. 15-20 BM's per day sounds pretty severe to me and may not even be UC related since you aren't having the blood or other symptoms as you mentioned. That is also not consistent with mild to moderate UC that you were just diagnosed with. Are you having mucous, urgency and tenesmus as those are other UC symptoms?
What does your blood work look like? I would ask your GI or PCP for a thorough stool culture to rule out bacteria and parasites, including c diff etc. You can also add a fecal calprotecin stool test for intestinal inflammation.
I would try going off the fish oil and phillips colon health to see if they are adding to the problem. Some folks do get D from fish oil and 2,000mg is a high dose ( I take 1/2 of that). I don't think these would be causing the problem but may contribute. You may need a different probiotic as well.
Additionally, diarrhea can be a side effect of lialda and other mesalamines. about
