A lot of people with UC seem to get results going either gluten or fully grain free, which is why the SCD, paleo, IBD-AID diet are used by thousands with UC. Some have to do dairy free too. You can start with a more restrictive diet and then gradually introduce foods one at a time in 1-2 week increments and keep a food diary.
If you want more of a structure you can try one of the popular diets for UC (SCD, paleo, FODMAP etc).
Ive been on SCD for over a decade with great results--but it can be restrictive for many and requires a real commitment.
