Your alcohol response, like so many things UC, varies greatly person-to-person. In a remission, alcohol in moderation does not have a noticeable affect on my UC. Flaring, it can. Some here compare drinking alcohol with a colonoscopy prep even in a remission.
Listen to your body and don't over due it. We can be allergic to the gluten in beer and some other spirits (i.e., a wheat whiskey). We can be allergic to sulfites which are common in red wine, as an example. You can try gluten-free, and sulfite-free alcohols in moderation and see if you can tolerate them.
Alcohol is a known gut irritant, so it can slightly inflame and bother the GI-tract. We already have inflammation issues with an UC so you're adding gasoline to the fire when you go overboard with alcohol and binge-drink.
