Glad you're feeling better. I have no issues at all with whole wheat fiber, gluten, or grains. They're a regular part of my diet.
Their are absolutely no, universal rules of do's and do not's that apply to all UC patients haha. It's extremely individual on what might affect us as UC patients. It is true that we are more prone to have issues with gluten, or issues with dairy than the general population (just increased odds but far from being guaranteed). So some of us do have a non-celiac-gluten intolerance, and avoid it. Food intolerance aren't all that common but some of us do have them with an UC causing some to be more sensitive to this than the general population.
It's always good for everyone to eat a diet with a variety of healthy, natural foods, and there's some evidence to say even more important for us with an IBD/UC. Processed foods are crap, have limited nutrients, low fiber, and have lots of unnatural additives. I try and limit processed foods to an occasional treat (hey we're only human and there's times a greasy burger and fries are bliss). I shop the edges of the supermarket and load my cart up with fresh veggies, raw meats, dairy, and breads with ingredients that I can understand (flour, eggs, milk, etc.).
