Hi PPI-less!
Even before I started this diet, I was a healthy eater, so it has not been hard at home. It IS hard going out to eat, or to a social event. I am grateful I found Calci-Blend to sprinkle on food to reduce acidity, so I have to worry mostly about
fat.
I often keep brown rice in the fridge. I mix it with veggies and beans or a little meat for lunch. One of my favorites is canned tuna, green beans and dill. Seafood salad works just fine with a couple of tablespoons of olive oil instead of mayonaise. I often eat yogurt, with a calcium carbonate tablet to reduce acidity.
In colder weather I make a lot of soups, starting with chicken stock from a box, not canned. All soups start by sauteeing about
equal quantities of onions, celery and grated carrot. Thyme and cumin are nice spices with chicken.
Roasting a turkey provides meals for a week. We do that about
once a month. Thanksgiving dinner is a permitted meal without gravy. I made a nice squash casserole this year: on top of a 2-inch layer of winter squash, I put a 1/2" layer of breadcrumbs, then a layer of sauteed veggies including 1 onion, 1 green pepper and 8 oz. mushrooms. Top with a tablespoon or so of parmesan cheese. I was never a fan of marshmallows with squash.
Two Boneless skinless chicken breasts cook in the microwave in 5 minutes. Put them in a covered bowl with a little water. I cut them up, and eat them with rice, potatoes, veggies or a nice slice of good toasted bread. I also eat crackers frequently, Triscuit or Wheat Thins reduced fat, or graham crackers.
Here's an actual recipe I like for Chicken Florentine: Chicken (2 boneless skinless breasts, in small pieces)
Mushrooms, 1 container fresh (cut to desired size)
½ Onion, chopped, 2 garlic chopped
Baby Spinach (bag)
¼# mozzarella cheese, grated
½ # cooked pasta
Jar roasted red peppers, drained
Sm can whole tomatoes
Saute mushrooms onions & garlic in a skillet with olive oil. Add chicken & cook until nearly done. Add salt & pepper to taste.
Put pasta in the bottom of a large casserole dish. Mix in other ingredients. Heat in oven ½ hour.
My husband sometimes puts a can of whole tomatoes in things he's making. He eats most of them, but some of the flavor is there, and a few will fall apart so I get a few pieces. I have tested the pH in dishes like this, it is usually above 5.
I hope this gives you some ideas. I think everybody cheats occasionally on most diets. I am no more perfect than anyone else, but I think it was a mistake for me to every day be seeing what I could get away with eating. I rarely have heartburn, so I think I was eating a lot of things that were collectively making me not feel well.
