I'm not sure if your surgeon told you, but even with the Nissen surgery, you can still get some reflux. If the wrap was made tight enough to keep absolutely all reflux in the stomach, it would be too tight to get food past it and into your stomach. The goal instead, is get us to a reflux level that is "normal"...much like those friends who seem to be able to eat anything MOST of the time.
It's pretty common to feel some reflux/irritation during those times when we're overdoing it, and maybe eating more trigger foods. It takes time for things to settle down again, and for any irritation to heal. Remember that your esophagus is a "dumb organ", and irritation can feel like reflux.
Try not to panic. It's unlikely you're headed toward your pre-surgery condition. Consider adding Zantac or even a PPI until things settle down again. I'm not sure what you're describing as "spray". If you're noticing problems when lying down try elevating the head of your bed, or a wedge, until you have things settled down and back to normal.
