It sounds like you really do need medicine to clear these infections. There aren't really "horrific" side effects with all antibiotics. Have you taken one of the drugs your doctor prescribed before? Did you tell the doctor about it? There are many antibiotics available and he could give you something else if you are sensitive to the one he gave you.
The medicine for yeast usually isn't as bad as some of the antibiotics for bacteria.
Taking your PPI may help you tolerate your drugs.
If anxiety is giving you a problem, have you asked for something to help with it? If the gastroenterologist doesn't want to deal with it, how about asking your regular doctor?
Yes, taking probiotics can be helpful, especially when taking antibiotics. Don't take them at the same time as the antibiotics because they'll just get killed off as well. After you finish the antibiotics you may need them for a while. I don't believe in taking anything extra all the time. Probiotics may be helpful for intestinal issues, but ask your doctor whether you really need them on a regular basis after you get well.
Since you've seen the doctor and I presume he's prescribed the medicines, don't waste any more time worrying about things you may have read online. You've already had this infection for 2 months. Trust your doctor and get started with healing. If you have a problem, call him right away. Don't let things go on, and don't just stop taking medicine you need unless he says to.
