Sorry I should have said. I take the PPI 30 mins before food and on an empty stomach. I am quite religious with taking them correctly.
I have kept food diaries for years (have had this for 10 years) and there isn't a trigger really. I get worse with chocolate etc. (I avoid it and the usual triggers) but I get this even when I have been eating what doesn't normally trigger me. I also avoid gassy foods, never drink through a straw and don't drink any fizzy drinks!
I know fundo is a last resort, that is why I have lived with these symptoms for 10 years (basically all of my 20s!).

Hi jennie.
There's no such thing as too much acid in the stomach. It's just acid getting into the esophagus where it doesn't belong that's the problem. The esophagus doesn't tolerate acid. The reason for the PPIs is to make the stuff that gets into the esophagus non-acid so it doesn't burn and cause trouble like Barrett's.
This is exactly what I was wondering. So it is the acid/refluxed food etc. hitting my oesophagus that is causing the issues. So surely if the acid can't hit the oesophagus, then I won't get the churning, indigestion, pressure pain anymore. The PPI's do stop it burning and being acid most of the time. I would say 99% of the time.
I think stress causes it to get worse not food.
