Teacherman, I make wonderful use of my pressure cooker (it is not dangerous and saves tons of time). You can stir fry, steam, simmer and pressure cook in it. Example of a favorite--one pound of dried beans (rinsed), one bag of frozen chopped onions (cooked onions do not cause heartburn), six cups of water. Cook for an hour and let pressure go down on it own. You can cook brown rice under pressure in 10-15 minutes. When done, pile the beans on the rice and enjoy. Of course you can add other flavoring agents, even some liquid smoke, smoked salt, cilantro etc. I steam a bunch of broccoli in a basket in the cooker, or asparagus, or another favorite is cut up carrots and potatoes with olive oil and dried salad greens or parsley etc. My pressure cooker (i have two) is the best investment I've ever made. ( if you NEED to eat meat, throw in pieces of chicken like thigh, leg with cut up potatoes and whole carrots, cook 8-10 minutes (with maybe added celery, onions, skin removed) and that's a whole meal in a pot. Do not expect it to be crusty, salty or crunchy. That's too processed -- add sprinkling of salt to surface before you eat. Of course, make a huge salad with lots of veggies to go with it. Light on the dressing. Body will thank you for it. (Gee, I'm sorry for the lecture but at my very advanced age I feel that my eating plan is responsible for it.) Keep cooking very simple.
