I just had a thread very recently about bloating after Nissen. I will try to find it, but what worked for me was eliminating wheat and oats, all dairy and raw fruits and veg (I do eat grapes and small amounts of fruit) I take digestive enzymes and eliminated coffee.
I try to be careful about how much air I swallow. I take small sips of my water instead of big gulps and I walk as much as I can.
I still get painfully bloated, and am still trying to be strict on my diet. I have also tried activated charcoal, which may or may not be effective, I still think diet is a lot better at controling it than gas x or charcoal.
You are probably still very swollen. I noticed the bloat was worse when my BMs were not regular, so i supplemented magnesium to help with that. I used Natural Calm, but you can use smooth move tea or senna or whatever works for you if that is the case.
It is still very early in your recovery, so a lot of this will get better on its own. I just saw my surgeon two days ago about this (I am four months out) and he said that gassyness is one of the biggest lingering complaints for people post nissen. Usually it gets much better by the 6 month mark, but sometimes it can just linger on and on to a certain degree.
