Stress does make the situation worse. Like being nervous / getting the jitters, it does cause your throat to tighten considerably.
I haven't seen my physician regarding my acid reflux yet. I've tried going to walk-ins and unfortunately, all the physicians told me to go back to my primary physician to order some tests and to be referred to a GI specialist. The problem is, the earliest date that I can see my physician is mid next month. :(
I'm also afraid to eat too and the scariest part is swallowing the food followed by how you feel afterwards. I still haven't found a way to overcome this fear and I can't even recall the last time I ever enjoyed a nice, normal meal.

I tried the liquid thing but I have lost so much weight I just cant make it work.
I hope you feel better soon and good luck at getting that appointment. I wish I could sit down like I use to and just enjoy a meal. Now I just eat because I have to and I hate every minute of it and the worst part if I see no end to this, its so depressing.
