I apologize if any of the infos I post are inaccurate I'm doing this from memory. First a bit of info on pylori from what i remember about half the population is infected (usually during childhood) but only causes symptoms in about 5% of the infected people. It is indeed fairly easy to transmit I remember reading it can even survive on utensils for awhile so I'd guess (haven't read specifically) transmission through kissing is high (your wife).
So with that said doctors don't know (yet) why it causes symptoms in some people and not in others. The theory is the immune system keeps it under control. Antibiotic are indeed the way to put it back under control when the immune system does a bad job but it doesn't eradicate it nor does it give you immunity to it. So if the antibiotics removed the excess but your wife still had it it's possible it made recolonization faster.
At this point my guess would be it's probably been out of control for awhile but due to easy access out of your stomach it couldn't concentrate on doing damage in only part. Your body had time to heal and maybe even manage to somewhat keep it under control by getting stuck in the esophagus (maybe even throat) with no food source. Now that it's confined to your stomach it can focus the damage there creating symptoms.
When you get tested again for it if it comes positive I'd start looking into why it keeps happening. Maybe boosting your immune system would help and I know there are quite a few diets online to keep it under control so that'd be worth a try. One thing to keep in mind as far as I'm aware the only real way to know 100% if your symptoms are h pylori is through an upper endoscopy but I'm guessing this isn't possible with the Nissen? I mean, they can detect it even through your breath but like I said half the population has it so it's not as effective as looking for internal stomach damage. But if the antibiotics worked the first time and they work again then I guess y'all just really unlucky and you're really gonna need to find a way to boost your immune system or a special diet.
