Hi Folks!
Came to bring a new recipe idea in case your longing for a new taste. My husband and I call it "Roll Ups."
I get:
1 can Pinto Beans, with no spices, just beans and water (sometimes have to get Organic)
1 half serving of cooked brown rice with cilantro (which is good for GERD and has taste too)
1 half bag of frozen Early Harvest Sweet Corn (cook 3 min. does not need to be hot, just thawed)
1 tomato chopped (my husband can tolerate tomatoes, but not tomato sauce, paste, or soup)
1 half avocado chopped
Fat-Free Sour Cream
2% Sharp Cheddar Cheese
Whole Wheat large size Burrito
This will give two large servings
Cook a half serving of brown rice (which is basically, 1 cup water to boil, 1/2 cup brown rice, cook 45 min.)
chop a small amount of cilantro and cook with rice
Microwave corn for 3 min., set aside,
chop tomato and avocado, then
microwave beans (medium or reheat for 2-3 min depending on your micro.)
Put your Broiler on, when heated, Take 1 Whole Wheat burrito put cheddar cheese on and
melt under broiler, put onto burrito and melted cheese the beans, corn, rice, fat-free sour cream,
tomato, and avocado, roll it up and chow down!
Sounds complicated, but is not. I start the rice when I get home (does not take very long for 1 cup of water to boil!)
set the timer, change clothes, start laundry or whatever, then go back heat the corn and beans, chop the tomato & avocado
take the sour cream out so it's not too cold, by then there is only a few minutes left for rice to cook, I heat the broiler, melt the
cheese on the burrito and start to load it up. Bland doesn't have to be boring!
Brown rice and beans make a perfect complex carbohydrate, protein and fiber. It's very filling and it has flavor! Enjoy!
