No doctors here, so we can't really diagnose, but we can sympathize.
What kind of doctors did you see? How did they come up with gluten allergy? Did they test for celiac with biopsy?
There are many types of wheat and/or gluten allergies. First there's a simple gluten or wheat intolerance. This could make you feel sick after eating. Then there's true allergy which could make you sick and give you hives or closing of throat symptoms. Finally there's celiac, which is often but not necessarily inherited.
True allergy or celiac can give you problems even if you use any soaps or shampoos or skin creams or makeup with gluten, which most of them have. Just removing gluten from your diet won't solve your problem for these conditions.
If you completely remove gluten from every source you should feel better within days and skin should clear within a couple of weeks, from a friend's experience.
Frankly, I wouldn't be eating processed foods with this condition. I don't know what's included in the "freeform" products. If you aren't feeling better by now, there may be something else that needs to be considered .... or maybe you aren't really completely gluten free.
There are many other food intolerances which can cause you to feel sick after eating. Keeping a good food log or journal (see more posts in the search box at the top of the page) will help you and your doctors determine if you have any other intolerances. Many people have more than one.
