Your allergies might well be causing reflux, which in turn can cause your sore throat. Or the allergies themselves can cause sinus drainage that can cause sore throat.
Reflux can start anytime and so can allergies. I became allergic to grass just a few years ago, and I tolerate cats now.
I would see the doctors and get them both to do testing. Reflux can be seen on barium swallow - non-invasive, easy. A few skin tests can show the allergies. Blood tests aren't very reliable.
Just in case - try keeping a food journal (see the search box at the top of the page) to see if you can be sure of food allergies. You can add handling the cat too. These results can help your allergist!
Keep track of everything you eat and drink, including vitamins and especially non-prescription treatments. Biotin, for example, contains enough sulfite to trigger a reaction for me. If you eat a hamburger for example, you have to mention all the condiments. Those are the parts that bother me. If a meal causes a reaction you need to try the individual parts separately. It took me a long time to find out that it's the ginger in pumpkin pie that was my problem. It's the preservative in that spice I don't tolerate. But the pie just isn't the same without it. :(
