The thing about
something like this, is the more you worry about
it, the worse it can get, right? You get nervous, and the feelings escalate, especially if you sense someone is noticing.
A good way to prevent this from happening is to practice coping skills while you are relaxed, so that you will be able to call upon them when necessary.
Progressive Muscle Relaxation can train you to instantly relax anty muscle groups you need to...including those of the throat that are tight due to anxiety.

Deep breathing is another relaxing exercise that you can do anytime/anywhere.

Another trick is to carry water with you at all times. Almost everyone does now, so it will not be conspicuous.
Most people with anxiety swallowing issues have no trouble swallowing liquids...so this may be a way to break the 'catching sensation' that happens.
Ultimately remember that your body will eventually swallow on its own as a reflex anyway, so there is no need to worry that it is never going to happen again...
