A few things come to mind...
One is anxiety being triggered by the shared sensations of working-out and anxiety. The brain has trouble disassociating the increased HR/body temperature, sweating and muscle weakness with an activity that is beneficial...and has nothing to do with panic!
Two, you could be having low blood sugar...are you eating enough to support your workout? Hypoglycemia and panic feel very similar.
Three...you could be sensitive to lactic acid...which can build up in the muscles after intense workouts...it can have an anxious effect on some people.
Keep going with your workouts...but dial it back a bit and work you way up S-L-O-W-L-Y. :)
